Celiac disease is characterized by a severe reaction to gluten. The lining of the small intestine is damaged by chronic inflammation, leading to damage of villi (small finger-like projections of the intestine wall, increasing the absorptive surface), and resulting in malnutrition. Other symptoms include diarrhea, gas, bloating, anemia, and osteoporosis.
